The Good Life

Yesterday, being a student and volunteer at Living Under One Sun made The Good Life a modern, organic and sustainable reality.

With Gemma Harris leading, we went foraging and returned with Yarrow, Garlic mustard, Red Dead Nettle (to name a view).

The edible weeds were replanted in the "Foraging Specimen Bed". The bed is signposted with a sturdy plank on which Miriam wrote the bed's identity...

Aadil showed me the strawberry bed he's working on, with two rows of strawberries already planted...it's going to be a blessedly abundant summer.



Fruits of our Labour


We picked an abundance of "greens" from the allotments to make salad to eat (a late lunch) and to take home. Davina shared out the "take home" and deftly wrapped them in newspapers. We each took home portions of newly picked rhubarb, kale, chard, broccoli, land cress, spring onions and leeks.

At home I washed the kale and chard leaves. Trimmed and cut the leeks and spring onions and sautéed them in a little coconut oil, seasoned with ground black pepper. I added the kale and chard leaves, placed the pan lid on and left to steam for a few minutes.

I served the deliciously wilted mixture as a side dish (while still hot). This is a versatile recipe...a child would love it. It can also be served with mashed potato on top...it can be served in a variety of ways...
